USDA-inspected whole Cayuga duck is processed at MM Poultry in Versailles, Missouri, a federally inspected facility, producing a labeled frozen whole bird eligible for purchase by restaurants, retail grocers, and institutional buyers requiring federal inspection documentation. Small grower exempt whole Cayuga duck is processed on-farm under the Missouri and Kansas small grower exemption, available as a fresh or frozen whole bird for direct farm-to-consumer local pickup in the Kansas City metropolitan area and five-state network region.
