Raised and Processed Right Here

Every duck we sell is raised on-site at our urban farm in Kansas City, Kansas, in our own backyard. We are permitted for up to 40 ducklings at a time, we keep that number stocked steadily, and we butcher on a roughly eight-to-ten-week cycle. Most of our processing happens right here on the farm, done under USDA guidelines or the USDA small grower exemption. When ducks are destined for restaurant or retail sale, we drive them out to Versailles, Missouri, where the Mennonite-run processing facility handles USDA-inspected slaughter and processing. Cayugas take an extra processing step that most other duck farms skip entirely — because of the dark plumage, birds have to be both butchered and waxed, then the wax peeled off, to get a clean carcass. It’s more labor than a Pekin needs, which is exactly why almost nobody else bothers raising them. For us, the extra step is worth it for meat this good.

A Genuinely Rare Breed

Cayuga is a heritage duck breed, and it is rare. The Livestock Conservancy currently lists Cayuga on its Watch category, meaning fewer than 5,000 breeding birds in the United States and an estimated global population of less than 10,000 — a tiny fraction next to the more than a billion Pekin ducks raised worldwide. Ancona, another heritage duck breed we work with, sits in a similarly small population range of about 10,000 ducks in the world.
